🥗 Crispy Rice Salad (Middle Eastern–Inspired)
Ingredients
For the
crispy rice:
300 g
cooked rice (≈ 10.5 oz), completely cooled
2 tbsp
olive oil (≈ 30 ml)
Salt, to
taste
Black
pepper, to taste
For the
salad:
150 g
cucumber, diced (≈ 5.3 oz)
150 g
cherry tomatoes, halved (≈ 5.3 oz)
40 g red
onion, very thinly sliced (≈ 1.4 oz)
Fresh herbs
(parsley, mint, dill) — about 25 g total (≈ 0.9 oz)
For the
lemon dressing:
Juice of 1
large lemon
3 tbsp
extra virgin olive oil (≈ 45 ml)
Salt &
black pepper, to taste
Optional:
½ tsp sumac
for brightness
or ¼ tsp
ground cumin for warmth
👩🍳 How to Make It
Preheat the
oven to 200°C / 400°F
Spread the
cooked rice on a large baking tray
Drizzle
with olive oil, season with salt and pepper
Mix well
and spread into a thin, even layer
Bake for
30–40 minutes, flipping once halfway, until deep golden and crispy
Let the
rice cool slightly — this keeps it crunchy
Prepare the
vegetables and herbs
Whisk all
dressing ingredients in a small bowl
In a large
bowl, add crispy rice first, then vegetables and herbs
Pour dressing
over and gently toss just once
Serve
immediately while the rice is still crisp
